Vegetarian Broth

A delicious, nourishing and healing vegetarian broth that provides your body with dense nutrients and your soul with deep healing and nourishment.

Ingredients

  • 2 leeks chopped
  • 4 celery stalks chopped
  • 2 garlic cloves minced
  • 2 tbsp. olive oil
  • 2 golden beets chopped
  • 1 tbsp. dried wakame
  • 1 bay leaf
  • 2 sprigs of thyme
  • 1 turmeric knob sliced
  • 1 ginger knob sliced
  • 4 litres water
  • 4 tbsp arrowroot flour
  • 1 cup extra water

 

Method

Mix arrowroot flour in 1 cup water to form a smooth paste then put aside.

Place the leeks into a large saucepan and dry fry until translucent on medium heat. Add a bit of water if they start to stick. Add the rest of the ingredients and turn up the heat. Cook for 2 minutes stirring constantly before adding the 4 litres of water.

Bring to the boil then turn down the heat and simmer with lid on for 60 minutes stirring occasionally.

To finish add the arrowroot paste to the pot and stir through for 1-2 mins.

Turn off the heat and strain the broth through a strainer into another pot.
Discard the veggies keeping only the broth.

Drink 500ml daily.

Keep in fridge for up to 7 days.
